CULINARY SPECIALTY – The latest addition to Grand Rapids Community College’s educational offerings, a craft brewing certificate, enhances the college’s already award winning culinary program. To serve the needs of this program, C2AE worked to transform an underused second floor space into the first brewery on a college campus in the nation wholly owned by the institution.

As a new, specialized space within an existing building, the brewery presented interesting design challenges requiring architecture and infrastructure congruity. Because the building was occupied during construction, the design team took special care to maintain the structural integrity of the space through the space plan and wall construction choices. Brewing equipment, which is immensely heavy, had to be thoughtfully selected and coordinated with the structure of the second floor lab space. Special exhaust systems remove brewing odors to maintain air quality.

Fountain Hill Brewery and the associated restaurant area Peter’s Pub are open to the public to encourage community support and showcase the students’ talents in a real-life setting. To allow for flexible space use, large sliding doors were added which can open or close to create an intimate classroom or welcoming pub.  Special consideration was taken to showcase the brew lab to pub patrons through a glass window and highlight this one-of-a-kind program.
